All grains used in production of our whiskey are the highest-grade, non-GMO certified or USDA organic varietals of corn, rye, wheat and barley that adhere to strict USDA specifications, which not only aligns with consumer preferences but also ensures maximum marketability of our products and compliance with export requirements as many European markets are either prohibit or restrict the use of genetically modified grains.

Corn is a foundation of Bourbon. Choice of corn varietal used in a mash bill is crucial for creation of authentic, one-of-a-kind flavor profile of resulting whiskey. Our USDA No.2 yellow “dent” corn, a staple distiller’s corn varietal used in bourbon manufacturing, is Non-GMO certified and is sourced only from Kentucky farmers. Legacy Cask also offers signature American Whiskey products distilled from heirloom varieties of corn that are valued for their ability to contribute distinct attributes, aspirational pre-Prohibition character and unique flavors to whiskey. Consumer interest towards the rich heritage of the nation’s spirit, its traditional production involving heirloom grains is on the rise as whiskey aficionados are looking for original new flavors and engaging brand stories. Reliance on heritage grain enables brand owners to establish a powerful connection between their whiskey, the land and the people who cultivate it, and create a true “field-to-grass” experience.

Our “flavor” grains – rye and wheat – are non-GMO certified. Our wheat comes only from Kentucky growers. We use only USDA Grade No. 1 rye grain for our high rye Bourbons and Rye whiskies that is predominantly sourced domestically from such top rye-producing regions as Minnesota, Wisconsin, North Dakota and South Dakota. Some of our rye is also imported from Canada (Manitoba, Saskatchewan, Alberta, Ontario, Quebec), Germany and Sweden. Traditionally, application of barley in American Whiskey production has been mainly centered on its high enzyme content that is instrumental in conversion of complex starches found in corn, rye and wheat into simple fermentable sugars. In typical bourbon mash bill, malted barley is added in small amounts - 5% to 12% - that are sufficient to jumpstart the fermentation process and generally is not viewed as a major flavor contributor. However, barley is one of the few grains that is credited with imparting a sense of terroir to whiskey and is able to contribute malty, nutty, smoky, and toasty flavors to whiskey. Lately, barley has evolved into an essential ingredient of whiskey making, taking central stage with establishing new American Single Malt Whiskey category by the TTB in 2024. Our barley is sourced from North America (the states of Montana, Idaho, North Dakota, South Dakota) and from Canada (Alberta, Saskatchewan). We use only Odyssey and other non-Glycosidic Nitriles forming barley varieties in our production to ensure the best quality and safety of our whiskey products.

The cornerstone of Legacy Cask philosophy is that great whiskey starts with the great grain. To ensure the highest quality of our American Whiskey, we employ strict quality standards when sourcing our grains, with each batch rigorously tested and evaluated for moisture content, kernel size and hardness, starch content and viability, milling yield, oil and protein content, and conformity with desired organoleptic characteristics. All grain selected for our bourbon and whiskey is carefully inspected for potential safety issues such as presence of fungal contamination, mycotoxins, any evidence of insects and mites, or a presence of a foreign odor and dust. Only the best, premium quality grain is used for production of our American Whiskey allowing us to meet and exceed the requirements of our discerning trade buyers.

All American whiskeys begin with the creation of what’s known as a mash bill, the selection of particular grains and their ratios, that is used by distilleries to make their bourbon and whiskey. Four types of grain - corn, rye, wheat and malted barley – constitute a backbone of American Whiskey production and, when combined in different proportions in mash bills, create Bourbon and other categories of American whiskey. With different grains contributing different flavors to the distillate, the types and precise proportions of grains in the mash bill is an immeasurably important part of the final product’s taste and character. We have invested in ingredients testing and mash bill formulation trials in order to serve our customers with innovative whiskey products with distinct flavor profiles and to provide our partners with endless possibilities to satisfy their vision for each whiskey brand.

Legacy Cask offers Bourbon Whiskey with several mash bills. Next to barrel maturation, the most important determinant in a whisky's taste and aroma is its mash bill. Depending on the flavor profile that you are looking for, we can supply traditional high-corn bourbons with corn percentage of 70%, 75% and 80%, high rye bourbons with rye percentage between 24% and up to 36% and wheated bourbons with wheat percentage of 24% and 36% for a sweeter and more mellow bourbon.

Rye Whiskey remains one of the most in-demand categories of American whiskey. Distilled from fermented mash that contains at least 51% rye and aged in new charred oak barrels, Rye whiskeys are known for their bold, spicy flavors, dry finish and earthy aromas with notes of pepper and fruit. We offer rye whiskey produced according to several mash bills, from a traditional 95% rye / 5% malted barley (our most robust and hearty expression of rye whiskey) and a “barely legal” milder formulation with 51% rye / 35% corn / 14% malted barley. Further customization is possible by finishing aged rye whiskey in secondary oak containers, such as port wine barrels or sherry casks, imparting flavor complexity.

One of the most sought-after whiskey expressions that we offer is American Single Malt. With this whiskey category finally recognized by the TTB, the spirit is experiencing resurgence, and we are proud to supply our clients with the finest single malt whiskeys distilled from 100% malted barley and aged for at least 2 years with smooth, aromatic profile, grain-focused character and fruity, complex finish. Our distillates are produced based on several distinct grain bills that feature combinations of Washington Select Pale Malt, Munich Malt, Extra Special Malt, Pale Chocolate Malt, and Brown Malt. To further customize available aged distillates, we can provide final finishing touches either by our Toasted Barrel finish or through secondary aging in Oloroso or Pedro Ximénez sherry casks or even in wine barrels for a truly distinctive character.

barrel aging is a fundamental step in producing great american whiskey where all its elements finally come together and shine.

Our American Whiskey is aged in meticulously crafted 53-gallon barrels made from the high-quality oak that achieved sustainable certification and has been air-dried for up to 24 months. Extended seasoning of our barrels allows natural elements (such as light, humidity and fungal activity) to facilitate changes in the oak chemistry, adding complexity to an aging spirit and softness to the palate. We offer our customers a choice of whiskey products that have been aged in American oak (quercus alba), European Oak (quercus robur) and French Oak (quercus petraea). American white oak is more porous and more assertive then its European counterparts, which allows for the wood properties to be transferred more easily and assertively to the whiskey. American white oak contributes sweet flavors of vanilla, caramel and maple syrup as well as roasted aromas such as coffee, smoke, tobacco and cocoa while French oak adds herbaceous spice, clove, cedar, nutmeg and cinnamon notes due to its higher levels of tannin as well as flavors of toasted almonds and mocha. A key characteristic of French Oak is its tighter grain which allows the spirit to age slowly, with the flavors of the wood being imparted gradually over time. Limited releases of super-premium whiskey with distinct organolpetic characteristics that have been aged in our Fusion barrels are available as well, with unique flavor profiles of these whiskeys derived from exposure to custom barrels combining staves from both American and French oak.

We offer our customers a variety of aged premium American Whiskey with distinct flavor profiles matured in oak barrels featuring custom toast levels and char combinations. Toast levels range from a Medium Toast that imparts delicate aromas of baked bread and butterscotch, to a Medium Plus Toast that produces a complex array of the popular barrel derived flavors such as vanilla and rich caramel, and up to a Heavy Toast, a bold and spice-forward option, with underlying notes of smoke, lactone, and chocolate. Toasted barrels are charred to Level #3 (35 seconds of heat exposure) or to Level #4 (55 seconds of heat exposure), also referred to as an “alligator char” due to the resemblance of the charred barrel’s cracked surface pattern to the skin of an alligator. Depending on the level of char different amounts of wood sugars are caramelized, producing different flavors and aromas in the whiskey: medium char produces vanilla, honey and caramel flavors, while the heavier char provides more color and caramelization with rich robust flavors of espresso, caramelized sugar, tiramisu, roasted nuts and sweet smoke notes. Heavier char levels also release desirable oak flavors into the spirit more quickly, facilitating the aging process.

We age our American Whiskey in government-bonded warehouses in the State of Kentucky where climate and weather conditions provide for the optimal storage environment. Kentucky’s hot summer and cold winters cause bourbon barrels to contract and expand when temperature’s swings, which contributes to the flavor and color of the whiskey and facilitates aging. All our whiskeys are aged in traditional "rick house” style warehouses where whiskey barrels are stored on wooden "ricks" stacked several layers high, allowing for significant airflow between barrels. The increased airflow in a rick house is advantageous for developing complex flavor profile of our whiskey by allowing for more evaporation and oxidation.

Legacy Cask offers to trade buyers premium and super-premium whiskeys aged for 2 years and 4 years, which can be bottled, labelled and marketed as “straight” and “bottled in bond”, respectively. We have available a wide choice of specially selected barrels of particularly well-balanced, nuanced Bourbon, Rye Whiskey and American Single Malt Whiskey that have excellent structure and compelling distinct flavor profiles making them ideal for single barrel bottlings, limited releases in super-premium and luxury categories and special barrel programs.

Legacy Cask offers numerous options of barrel finishing, a technique used to enhance, refine and deepen the complexity of whiskey flavor by transferring aged spirits into different barrels for additional aging. One of the increasingly popular finishing techniques that we offer is a Toasted Barrel finish. After traditional aging in new charred oak casks is completed, we transfer our whiskey into secondary barrels that have been toasted for an extended period, resulting in development of pronounced, often dessert-like aromas and flavors and deep, exquisite colors. Toasting is a slow, lower-temperature treatment that allows radiant heat to penetrate deep into the wood, breaking down and caramelizing natural sugars to release flavors like vanilla, caramel, and spice. Finishing whiskey in toasted barrels allows to differentiate your whiskey brand through enrichment of the spirit's flavor profile and enhancing its complexity and aromas.

Another creative approach to barrel finishing is secondary aging in oak casks previously used for maturation of another type of distilled spirit or wine. Exposure of whiskey to such barrels can impart original new flavors and create unique, one of a kind flavor profile. We offer numerous options for barrel finishing that allow our customers to get access to truly exceptional spirits including barrel finishing in Pedro Ximénez sherry casks, ruby port, cognac, brandy and rum barrels. Long time favorite of Scotch makers for finishing their single malts, Pedro Ximénez sherry casks have become an increasingly popular choice for bourbon finishing as well, valued for their ability to impart gentle sweetness and chocolate notes. Like sherry, port comes in a variety of styles, with the most common, ruby port, offering bright fruit notes due to its minimal maturation. Finishing Bourbon in ruby port barrels adds sweetness, berry flavors and pleasant softness to the mouthfeel. Rum barrels can impart tropical fruit notes, spice, and a hint of sweetness, making the bourbon more approachable while finishing in cognac casks infuses the whiskey with notes of dried fruit, spice, and a subtle sweetness, enhancing its depth and adding a luxurious, velvety finish.
