Legacy Cask offers numerous options of barrel finishing, a technique used to enhance, refine and deepen the complexity of whiskey flavor by transferring aged spirits into different barrels for additional aging. One of the increasingly popular finishing techniques that we offer is a Toasted Barrel finish. After traditional aging in new charred oak casks is completed, we transfer our whiskey into secondary barrels that have been toasted for an extended period, resulting in development of pronounced, often dessert-like aromas and flavors and deep, exquisite colors. Toasting is a slow, lower-temperature treatment that allows radiant heat to penetrate deep into the wood, breaking down and caramelizing natural sugars to release flavors like vanilla, caramel, and spice. Finishing whiskey in toasted barrels allows to differentiate your whiskey brand through enrichment of the spirit's flavor profile and enhancing its complexity and aromas.

Another creative approach to barrel finishing is secondary aging in oak casks previously used for maturation of another type of distilled spirit or wine. Exposure of whiskey to such barrels can impart original new flavors and create unique, one of a kind flavor profile. Long time favorite of Scotch makers for finishing their single malts, Pedro Ximénez sherry casks have become an increasingly popular choice for bourbon finishing as well, valued for their ability to impart gentle sweetness and chocolate notes. Like sherry, port comes in a variety of styles, with the most common, ruby port, offering bright fruit notes due to its minimal maturation. Finishing Bourbon in ruby port barrels adds sweetness, berry flavors and pleasant softness to the mouthfeel. Rum barrels can impart tropical fruit notes, spice, and a hint of sweetness, making the bourbon more approachable while finishing in cognac casks infuses the whiskey with notes of dried fruit, spice, and a subtle sweetness, enhancing its depth and adding a luxurious, velvety finish.
