All American whiskeys begin with the creation of what’s known as a mash bill, the selection of particular grains and their ratios, that is used by distilleries to make their bourbon and whiskey. Four types of grain - corn, rye, wheat and malted barley – constitute a backbone of American Whiskey production and, when combined in different proportions in mash bills, create Bourbon and other categories of American whiskey. With different grains contributing different flavors to the distillate, the types and precise proportions of grains in the mash bill is an immeasurably important part of the final product’s taste and character. We have invested in ingredients testing and mash bill formulation trials in order to serve our customers with innovative whiskey products with distinct flavor profiles and to provide our partners with endless possibilities to satisfy their vision for each whiskey brand.

Legacy Cask offers Bourbon Whiskey with several mash bills. Next to barrel maturation, the most important determinant in a whisky's taste and aroma is its mash bill. Depending on the flavor profile that you are looking for, we can supply traditional high-corn bourbons with corn percentage of 70%, 75% and 80%, high rye bourbons with rye percentage between 24% and up to 36% and wheated bourbons with wheat percentage of 24% and 36% for a sweeter and more mellow bourbon.

Rye Whiskey remains one of the most in-demand categories of American whiskey. Distilled from fermented mash that contains at least 51% rye and aged in new charred oak barrels, Rye whiskeys are known for their bold, spicy flavors, dry finish and earthy aromas with notes of pepper and fruit. We offer rye whiskey produced according to several mash bills, from a traditional 95% rye / 5% malted barley (our most robust and hearty expression of rye whiskey) and a “barely legal” milder formulation with 51% rye / 35% corn / 14% malted barley. Further customization is possible by finishing aged rye whiskey in secondary oak containers, such as port wine barrels or sherry casks, imparting flavor complexity.

One of the most sought-after whiskey expressions that we offer is American Single Malt. With this whiskey category finally recognized by the TTB, the spirit is experiencing resurgence, and we are proud to supply our clients with the finest single malt whiskeys distilled from 100% malted barley and aged for at least 2 years with smooth, aromatic profile, grain-focused character and fruity, complex finish. Our distillates are produced based on several distinct grain bills that feature combinations of Washington Select Pale Malt, Munich Malt, Extra Special Malt, Pale Chocolate Malt, and Brown Malt. To further customize available aged distillates, we can provide final finishing touches either by our Toasted Barrel finish or through secondary aging in Oloroso or Pedro Ximénez sherry casks or even in wine barrels for a truly distinctive character.
